Stevie and her husband Marty are fourth generation cattle ranchers who run cow/calf pairs in Modoc County each summer and winter their herd between Manton and Redbluff. Their herd is exclusively grassfed and hormone and antibiotic free and is comprised of Angus and Hereford (known as a Black Baldy cross). Angus are known for excellent marbling, and the Hereford traits offer tenderness to the meat. This Black Baldy genetic combination certifies as Angus beef (Stevie explained that most cattle in the certified Angus program are Black Baldies). Stevie and Marty prefer and buy all of their bulls from Pharo Cattle Company in Colorado, which specializes in exclusively grassfed animals who are strong foragers and require little additional winter feeding, except in extreme conditions, while maintaining meat with excellent marbling. Stevie and Marty started Sage Country Meats four months ago and are quickly expanding their offerings. This week, please find their classic, grassfed ground hamburger meat on the Food Hub. Like many meat producers who sell through the Hub and nationally, COVID-19 has negatively impacted access to USDA butcher processing facilities. As more butcher options and meat cuts become available from Sage County Meats, the Hub will keep you posted. Also look for lamb and possibly bone broth in the future!
