Our beef is certified Grass Fed, meaning the cattle eat grass or hay grown on the Ranch for 100% of their lives. No grain or other non-grass feeds EVER! No hormones or growth-promoting drugs either. The fat in grass fed beef is different from that in beeves that eat grain. It’s higher in omega-3 fatty acids and conjugated linoleic acid (“CLA”). The beef is also higher in vitamins A, C and E, and higher in beta carotene.
Since the fat in grass fed beef is different, it needs to be cooked differently. The fat in grain fed beef acts as an insulator during cooking that keeps the meat juices from cooking away. This means grass fed beef requires a little more attention to maintain its tenderness and juiciness. Grass fed beef will cook 30% faster because its fat reaches a melting point at a lower temperature. This melted fat will also cause it to cook more after it’s removed from heat. If you start checking the meat for done-ness when it has cooked 50-60% of the cooking time for grain fed beef, take it off before it looks done, and let it rest for 5-10 minutes, it should be cooked perfectly!
